Collection: Pasture Raised Chicken

At Earth Garden Farms we raise slow-growing chickens that are older than supermarket birds when butchered. Being raised on pasture, these birds also have had much more exercise than their counterparts. This increased activity produces more flavor but requires more cooking time to tenderize muscles.

Age has benefits
When cooking chicken, younger birds may be more tender, but older birds have more flavor. We suggest taking your chicken out of the refrigerator for a couple hours to rest and temper prior to cooking.
Use a high-quality fat— Coat your bird in oil or butter to make it crisp when frying, sautéing, roasting, or grilling.

Cook it low and slow
Cooking EGF chickens should be done at a low temperature (~300°F) and shouldn’t be rushed. Because the breast meat is leaner, cooking low and slow will ensure the chicken won’t dry out. We also recommend to place chicken breast side down when roasting.

Consider brining
Supermarket chicken typically comes in a salt water solution or has been ‘plumped’ or injected with salt water. To increase tenderness and prevent drying EGF chicken, consider brining overnight. It’s delicious!
