Bringing back the flavor of grandma's country-style chicken! These are slow growing chicken raised on pasture for maximum flavor and and health benefits. Often the chicken we are accustomed to comes from 'baby' meat. Eating young chicken results in a tender bird, but does not have the true flavor of chicken! In a quest for flavor, we butchered these birds at about 6-7 months. There were active, free ranging under the sun and foraging on native oat grass, bugs, and supplemented with scraps and feed. Their carcass is not like commercial chicken in the grocery store. You will get longer drumsticks and proportionate breasts that make for a true country-style chicken. Cook method: Low and slow! Soups, stews, slow-cooker.
If you must grill, treat like ribs and prebake at 225F for 1.5 hours then ~10 minutes on the grill depending on size. Consider brining the night before. You will not regret it and it will be the best chicken you've ever had!
